Navigation: zoom and pan reference, Centre on cursor (pending #1190); drop merged #1159/#1161 notices

Corrects the zoom/pan text in user_manual, tips_and_tricks and mouse_modifiers
against the source: the plain wheel zooms, Ctrl+wheel scrolls, Space rotates
rather than pans, the bare +/- keys do nothing, and the menu path is
Affichage > Zoom adapté.
